Easy homemade Taquitos that your kids will love!
Packed with veggies!
Now this is just the basic veggies that I always put in my taquitos
but in the past I have sneaked in along with the basic veggies I have below mushrooms, zucchini , spinach. The list goes on with all the types of veggies you can put in here.
The amount and types of veggies you see in the picture below can be modified to your liking.
Just dice all the veggies into small little pieces, the smaller you can get them the better they can hide from those "Picky eaters" and the spices we are adding will mask a lot of the flavors and colors of the veggies too another bonus for the kids.
Then saute all the veggies together in a skillet with 2 Tbsp of olive oil and salt and pepper. On medium heat till the veggies are tender.
Tip. take a bite of one of the carrots to find out if the veggies are ready, if you can bite through it nicely then you can move on to the next step.
Then put 1 pound of ground meat ( could be beef,chicken,turkey) into the skillet along with the veggies and brown up all the meat.
Then add your spices and flavorings.
I like to add a couple of tbsp of Chili powder ( or a package of taco seasoning) but you can add less or more depending on your taste.
I also like to add half a cube of chicken bouillon and a tsp of chili pepper paste.
and salt and black pepper to taste.
Once you have tasted the mixture and your happy.
It's time to assemble the Taquitos!
I used for my whole mixture. 2 packages of small whole wheat tortillas ( 10 come in each pack) or you can buy one pack of the larger tortillas and make bigger taquitos.
You will need some cheese, I'm using cheddar and also some tooth picks to keep the taquito sealed for frying.
And just like that your ready to go to the frying pan with a little bit of canola oil or you can bake them at 400f till they are nice and brown. About 10 mins.
I call it Taquitos my children call it "Delicious".
